Chef Kate’s Muesli Bars
Chef Kate’s Muesli Bars with Coconut and Vanilla Vital Protein
These are tasty, crunchy and full of healthy ingredients! The Vanilla Vital Protein gives them and extra boost of protein and tastes great too! They are sure to be a hit with everyone in your family and friends too.
Ingredients:
½ Cup coconut oil
1 tablespoon coconut oil (for preparing the baking pan)
¼ Cup almond butter or macadamia nut butter
½ Cup coconut sugar or rapadura
¾ Cup honey or agave
2 tablespoons honey (for drizzling over top of bar before baking)
2 Cups rolled oats
½ Cup shredded coconut
¼ Cup raisins, gogi berries or currents (or a mixture of all 3)
2 to 4 Tablespoons Vanilla Vital Protein
¾ Cup walnuts, pecans or almond, coarsely chopped (or a mixture of all 3)
½ Cup sunflower seeds (reserve ¼ cup for topping)
½ Cup pumpkin seeds (reserve ¼ cup for topping)
2 Tablespoons chia seeds
4 Tablespoons sesame seeds (reserve 2 tablespoons for topping)
Method:
Line a medium baking pan with baking paper and generously rub coconut oil on the paper and set aside. In a medium size sauce pan on low heat melt coconut oil, coconut sugar, nut butter and honey. Add the raisins, vital protein, oats, shredded coconut, and half the seeds and nuts into the pan and mix thoroughly. Spread the mixture into the prepared baking pan and smooth the top. Spread the remaining seeds and nuts over the surface and drizzle 2 tablespoons honey over the top. Place in preheated 160C degree oven and bake for around 20 to 30 minutes until golden brown around the edges and the middle is semi set. (Check after 15 minutes to see if it is browning too quickly and cover with baking paper if needed.) Cool completely in the pan, lift out of pan by pulling up on the baking paper. Transfer to a chopping board and cut into desired sized squares and removed from the baking paper. They will keep in an airtight container or wrapped in baking paper then foil for a few days…but they are so good you won’t have to worry about this
